Gluten-free Day #6

We are still going strong , even though I am behind in posting our menu. On day six we enjoyed:

*Pork Tenderloin marinated in some Italian dressing. Here is a quick method for a super-fast, lean dinner.
 
Pre-heat oven to 400 degrees. Season the pork tenderloin with, well there are a million things you could do. Then, throw it (gently place) in a roasting dish or sheet tray. DO NOT ROAST WITHOUT SEASONING IT! If you do, I will personally report you to the taste bud police.
 
Roast about 18-23 minutes or so. Specifically, you want about 145 degrees internal temp. No one wants to choke on dry pork, folks. Give it some love!
 
*Maple-Roasted Balsalmic Brussel Sprouts (YUM!)
 
This meal was tasty, fast, and great for the health.

Gluten-Free Day #5

Day five of our trek brought a dish that I still think about. It was a Mini-Turkey Meatball Pizza! Of course the crust was GF, and the turkey meatballs and homemade tomato sauce were so yummy. I topped it all with mozzarella. It was so good, not to mention low-calorie. Man, it was good.

Served with a salad on the side, we were four happy people!

Gluten-Free Day #4

Dinner tonight consisted of a pork stew with roasted sweet potatoes, prunes and figs braised in a red wine sauce. I served this over brown rice. Yum!

Gluten-Free Day #3

Day three brought cream and comfort. I made Chicken and Biscuits. The chicken, tossed in GF flour and sauteed, married well with carrots, peas and leeks. This cream sauce, chicken and veggies was spread over GF biscuits that were surprisingly like their glutinous counter-part. It was all delish and the gluten was not missed!

Gluten-Free Day #2

With breakfast filled with GF cereals and oatmeal with fruit, and lunches of raw veggies, nuts, fruits and cheese, dinner is really the big focus of this month for cooking.

Day two showcased a yummy meatloaf with our Mr. Moo III (our grass-fed steer meat). Instead of breadcrumbs, I used crushed GF puffed rice cereal to bind it together. I served it with a turnip and apple mash, and a green leafy salad. We also had leftover GF bread.

Gluten-Free Day #1

Unfortunately, I didn't take pictures of a super-simple soup I made in the slow cooker. Our first gluten-free day of our cleansing month happened to be a busy one.

Earlier in the day, I made a loaf of gluten-free (GF) bread. Thanks to my trusty electric knife, I was able to make thinner slices of the soft bread.

Since I wouldn't be home until 5:45, I needed some hot food waiting for us. Sometime I'll have to post that Broccoli Soup recipe, because it is healthy and fast!

This month, we are hoping to improve our health, as three out of four of us now have a gluten sensitivity.

Game Night

We had Jason's brothers over for a game night. I made some fancy Bobby Flay burgers with Mr. Moo III. Next time, I will win! :)
