Gluten-Free #8

This meal was a little accidental. I had leftover roast chicken and some avacados screaming to be eaten.

I toasted some corn tortillas in the oven. Then, I piled on the chicken, a little salsa, shredded lettuce, sharp cheddar and some homemade guacamole.

It was so simple and quick. Once again, we didn't miss the gluten!
